AF Servo – Autofocus servo is the ability for the camera to continuously focus on the subject while it moves through the scene. This feature is very useful when photographing sports, wildlife and fast moving children. 🙂
AF Servo is also known as “AI Servo” on a Canon camera or “Continuous” on a Nikon camera.

On nikon its abbreviation in the menu’s/screens is : [AF-C]

You are right, also on the top-in Nikon models like the D300/D700/D3S/D3X, there is a switch on the side with [C] for “Continuous” so you don’t have to go into the menu.
